Ingredients• 3 cups all-purpose flour • 1 teaspoon salt • 1 teaspoon baking powder • 1 teaspoon baking soda • 1 tablespoon ground cinnamon • 3 large eggs • 1 cup vegetable oil • 3 teaspoons vanilla extract • 2 1/4 cups white sugar • 2 cups zucchini, grated • 1 cup walnuts, chopped
Grease and flour two 8x4-inch pans. Preheat the oven to 325 degrees F.
Sift the flour, salt, baking powder, soda, and cinnamon together in a bowl.
Beat the eggs, oil, vanilla, and sugar together in a separate large bowl.
Add the sifted dry ingredient mixture to the wet mixture, beating well.
Stir in the zucchini and nuts until well combined.
Pour the batter into prepared pans.
Bake until a tester inserted in the center comes out clean, about 40-60 minutes.
Cool the bread in the pan on the rack for 20 minutes.
Remove the bread from the pan, and let it cool completely.
