Ingredients• 1 tablespoon plus 1 teaspoon canola oil, divided • 3 large eggs • 1 (11-ounce) can of mandarin oranges • 2 medium sweet red peppers, chopped • 1 cup fresh sugar snap peas, trimmed • 1 small onion, thinly sliced • 3 cloves garlic, minced • 1/2 teaspoon crushed red pepper flakes • 4 cups rice, cooked and cold • 2 cups beef, cooked and sliced against the grain into bite-sized pieces • 1 cup beef broth • 1/4 cup reduced-sodium soy sauce • 1/2 teaspoon salt • 1/4 teaspoon ground ginger
In a large skillet, heat 1 tablespoon of oil over medium-high heat.
Whisk the eggs until blended.
Pour the beaten eggs into the skillet.
As the eggs set, push the cooked portions of the egg toward the center, letting uncooked portions flow underneath the cooked portions.
When the eggs have thickened and no liquid egg remains, transfer the eggs to a cutting board and chop.
Drain the oranges, reserving 2 tablespoons of the juice.
In the same skillet, heat the remaining teaspoon of oil over medium-high heat.
Add the peppers, sugar snap peas, and onion, cooking until tender on the inside, about 1-2 minutes.
Add the garlic and pepper flakes and cook until fragrant, about 1 minute.
Add the rice, beef, beef broth, soy sauce, salt, ginger, and the reserved juices and cook until heated through, for about 5 minutes.
Gently stir in the eggs and oranges.
