Summertime Green Pea Salad

Green peas are little spheres of summer fun, with a sweet and savory flavor to match. The peas nestle together with crispy bites of fatty bacon, sharp and creamy cubes of cheddar cheese, and tangy sprinkles of onions. Then the salad dresses to impress with a creamy, sweet, and salty mayo and vinegar dressing. For the salad: • 1 1/2 pounds of frozen peas, thawed, drained • 8 slices of bacon, cooked, crumbled • 1 cup cheddar cheese, cubed • 1/2 cup red onion, finely diced For the salad dressing: • 1 cup mayonnaise • 2 tablespoons apple cider vinegar • 1 tablespoon granulated sugar • 1/4 teaspoon sea salt • 1/4 teaspoon black pepper


Step 1

In a medium bowl, place the peas, bacon, cheese, and onion.

In a separate small bowl, combine the mayonnaise, vinegar, sugar, salt, and pepper.
