Summer Chicken & Pomegranate Salad

For the red wine vinaigrette: • 2 tablespoons red wine vinegar • 2 tablespoons olive oil • 2 teaspoons Dijon mustard • 2 cloves garlic, crushed • 4 tablespoons water • salt, to taste For the salad: • 1 head romaine lettuce, chopped • 1 cup arugula • 9 ounces chicken breast, boneless, skinless, cooked, and sliced • 3/4 cup pomegranate seeds • 8 red grape tomatoes, halved • 8 gold grape tomatoes, halved • 1/2 avocado, sliced • kosher salt, to taste • ground black pepper, to taste


Step 1

Combine the red wine vinegar, olive oil, Dijon mustard, garlic, water, and salt in a jar, shaking it to combine into a vinaigrette.

Step 2

Arrange the lettuce, arugula, chicken, pomegranate, red grape tomatoes, gold grape tomatoes, avocado, salt, and pepper in a large salad bowl.

Step 3

Drizzle the salad with the dressing and serve immediately.
