IngredientsFor the crust: • 1/4 cup sugar • 1/2 cup butter, room temperature • 1 1/2 cup flour • 1/4 teaspoon salt For the filling: • 1/2 cup lemon juice • zest of 1 lemon • 8-10 strawberries • 1 1/2 cup sugar • 3 eggs • 1/4 cup plus 1 tablespoon flour • 1/2 teaspoon baking powder • 1/4 teaspoon salt • confectioner’s sugar, optional, for topping
Preheat the oven to 350 degrees F.
Beat together the 1/4 cup of the sugar and the butter until the mixture is light and creamy.
Little by little, add in the 1 1/2 cups of the flour and the 1/2 teaspoon of the salt until the mixture turns crumbly.
In a 9x13 inch pan, press the crust mixture down and along the sides.
Bake until lightly golden brown, about 17 minutes.
Add the lemon juice, lemon zest, strawberries, the remaining sugar, the eggs, the remaining flour, the baking powder, and the remaining salt to a blender and blend until smooth.
Pour the filling over the hot crust.
Bake until the middles of the bars are set, about 25 minutes.
Sprinkle the bars with the confectioner's sugar and serve warm.
