Spaghetti with Chicken

Spaghetti with Chicken is a quick and delicious dinner that is perfect for any night of the week! • salt, to taste • 6 tablespoons olive oil, divided, plus more as needed • 11 ounces spaghetti • 6 cloves garlic, finely chopped, divided • 12 ounces chicken, shredded or cubed • allspice powder, to taste • 2 teaspoons red chili flakes • 1-1 1/2 teaspoons pepper, coarsely crushed • 1 teaspoon herbs, to taste • 2 small onions, finely chopped • 1 1/2 cups tomatoes, ripe, red, deseeded, and puréed • parsley, optional, to taste, for garnish


Step 1

Bring water to a rapid boil in a large pot.

Step 2

Add the salt and 2 tablespoons of the oil.

Step 3

Add the pasta and cook to al dente according to package directions.

Step 4

Set aside some pasta water, and drain off the rest in a colander.

Step 5

In a large saucepan, heat 2 tablespoons of the olive oil.

Step 6

Add the garlic and saute until fragrant, about 1 minute.

Step 7

Add in the chicken and salt, and cook, stirring constantly, until the chicken is cooked to 165 degrees F.

Step 8

Add the allspice, red chili flakes, and pepper and sauté on high heat for 2 minutes.

Step 9

Set the chicken aside.

Step 10

Add the remaining olive oil, heating it until shimmering.

Step 11

Add the onions and sauté until the onions turn golden, about 5-7 minutes.

Step 12

Add the puréed tomatoes and cook until the sauce thickens.

Step 13

Add the sautéed chicken and 2 to 3 tablespoons of the reserved pasta water, mixing and cooking until the sauce reaches a thick consistency.

Step 14

Add the pasta and heat through, about 2-3 minutes.

Step 15

Add more olive oil if it looks dry.

Step 16

Serve the pasta hot, garnished with the parsley!
