Ingredients• salt, to taste • 6 tablespoons olive oil, divided, plus more as needed • 11 ounces spaghetti • 6 cloves garlic, finely chopped, divided • 12 ounces chicken, shredded or cubed • allspice powder, to taste • 2 teaspoons red chili flakes • 1-1 1/2 teaspoons pepper, coarsely crushed • 1 teaspoon herbs, to taste • 2 small onions, finely chopped • 1 1/2 cups tomatoes, ripe, red, deseeded, and puréed • parsley, optional, to taste, for garnish
Bring water to a rapid boil in a large pot.
Add the salt and 2 tablespoons of the oil.
Add the pasta and cook to al dente according to package directions.
Set aside some pasta water, and drain off the rest in a colander.
In a large saucepan, heat 2 tablespoons of the olive oil.
Add the garlic and saute until fragrant, about 1 minute.
Add in the chicken and salt, and cook, stirring constantly, until the chicken is cooked to 165 degrees F.
Add the allspice, red chili flakes, and pepper and sauté on high heat for 2 minutes.
Set the chicken aside.
Add the remaining olive oil, heating it until shimmering.
Add the onions and sauté until the onions turn golden, about 5-7 minutes.
Add the puréed tomatoes and cook until the sauce thickens.
Add the sautéed chicken and 2 to 3 tablespoons of the reserved pasta water, mixing and cooking until the sauce reaches a thick consistency.
Add the pasta and heat through, about 2-3 minutes.
Add more olive oil if it looks dry.
Serve the pasta hot, garnished with the parsley!
