Slow Cooker Crispy Corned Beef

• 3 pounds corned beef, with accompanying spice packets • 1 cup water, plus more depending on the size of slow cooker • 3 cloves garlic, minced • 1 bay leaf • 2 tablespoons sugar • 2 tablespoons cider vinegar • 1/2 teaspoon ground black pepper


Step 1

Add the corned beef, fat side up, to the slow cooker.

Step 2

Add the spice packets, minced garlic, pepper, and sugar to the top of the meat, rubbing it on.

Step 3

Add the bay leaf and vinegar off to the side of the corned beef.

Step 4

Add just enough water to come up 1/4 of the way to the top of the meat.

Step 5

Cook on low heat, covered, for 8-9 hours.

Step 6

If the corned beef isn't browned on top, put it under a broiler for 1-2 minutes in an oven-safe container. Keep careful watch, as you don't want to burn it!

Step 7

Carve and serve hot!
