• 1 large onion, chopped • 1 medium sweet red pepper, chopped • 2 teaspoons garlic, minced • 3 pounds chicken thighs, boneless and skinless • 1 tablespoon curry powder • 1 teaspoon ground cinnamon • 1 teaspoon ground ginger • 1 teaspoon dried thyme • 1 tablespoon packed brown sugar • 1/2 cup chicken broth • 1/2 cup golden raisins • 1 (14.5-ounce) can diced tomatoes, undrained • rice, optional, cooked, hot, for serving • parsley, optional, chopped, for garnish


Step 1

Place the onion, pepper, and garlic in a 6-quart slow cooker.
