Bland chicken should have no place in your kitchen, not while Queso Chicken exists! This dish combines nacho-style melted cheese and tender chicken for the ultimate meaty and melty delight. Ingredients• 4 chicken breasts, boneless • 1 cup buttermilk • 2 teaspoons taco seasoning • salt, to taste • pepper, to taste • 1 (10 ounce) can tomatoes and chilies, drained • 1 cup queso • 1 cup pepper jack and cheddar cheeses, shredded
Place the chicken in a ziplock bag with the buttermilk.
Let the chicken marinate for at least 30 minutes or up to overnight.
Drain and pat dry.
Preheat the oven to 375 degrees F.
Drizzle the taco seasoning, salt, and pepper onto the chicken.
Place the chicken in a glass 9x13-inch baking dish.
Pour half of the tomatoes and chiles onto the chicken.
Cover the chicken with the queso and place the remaining tomatoes on top.
Sprinkle with the grated cheese mixture.
Bake until the instant thermometer inserted into the thickest part of the chicken reads 155 degrees F, about F 25-30 minutes.
Remove the chicken from the oven and immediately tent with foil. They should rise to a safe serving temperature of 165 degrees F after 10 minutes of resting. If not, return them to the oven until they reach a safe temperature.
