Who says pepperoni is only for pizza? Pepperoni Casserole fully embraces pepperoni’s smoky, spicy flavor by making it the star: the pasta provides a tender foundation and the pasta sauce accents the seasonings in the meat. Pepperoni Casserole even features even more savory sausage to make it extra meaty and extra delicious.
Ingredients• 1 (16 ounce) package rotini pasta • 1 pound ground Italian sausage • 1 (16 ounce) jar pasta sauce • 2 (12 ounce) containers cottage cheese • 1 (2.25 ounce) can sliced black olives • 12 ounces mozzarella cheese, shredded • 2 (3 ounce) packages sliced pepperoni
Preheat the oven to 350 degrees F.
Lightly grease a 9x13-inch casserole dish.
Bring a large pot of lightly salted water to a boil.
Place the rotini pasta in the pot and cook until al dente, about 8-10 minutes.
Drain the pasta.
In a frying pan or skillet cook the sausage over medium heat until evenly cooked and the sausage has a nice brown color, about 6-8 minutes.
In the prepared casserole dish, mix the cooked pasta, sausage, and pasta sauce.
Mix the cottage cheese, olives, and mozzarella cheese in a bowl.
Spoon the cheese mixture over the sausage and pasta mixture.
Top the casserole with the pepperoni slices.
Bake until bubbly and cheese is lightly browned, about 25 minutes.
