For the filling: • 4 cups peaches, ripe, peeled, pitted, and sliced • 1/2 cup sugar • 2 tablespoons cornstarch • 1 tablespoon lemon zest • 1 tablespoon lemon juice For the cobbler: • 1/2 cup butter unsalted, cubed • 1 cup all-purpose flour • 1 tablespoon baking powder • 1/4 teaspoon salt • 1/2 cup granulated sugar • 1 large egg • 1 teaspoon vanilla extract • 1 cup milk • ice cream, optional, for serving


Step 1

Preheat the oven to 375 degrees F.
