Ingredients
• 4 pounds salmon filets • 1 cup plain breadcrumbs • 1 cup parmesan cheese, grated • 1/3 cup parsley, finely chopped • 6 cloves garlic, minced • 1/2 cup butter, melted • salt, to taste • pepper, to taste • lemon wedges, to serveDirections
Preheat the oven to 400 degrees F with the rack positioned in the middle.
Line a baking sheet with aluminum foil.
Place the salmon skin-side down on the prepared baking sheet. Set it aside.
In a mixing bowl, combine the breadcrumbs, parmesan, parsley, and garlic.
Pour the melted butter over the breadcrumb mixture and season it with salt and pepper.
Mix the breadcrumb mixture together until the butter is completely absorbed.
Press the breadcrumb mixture into the salmon filet until completely covered.
Lightly spray the salmon with cooking spray to achieve a nice, golden brown once baked.
Place the salmon in the oven and bake until the salmon can be easily flaked with a fork, about 12-15 minutes.
Slice the salmon into individual servings.
Serve with the lemon wedges.
