One-Pot Lasagna Soup

Here’s a soup that would do Garfield proud! One-Pot Lasagna Soup takes the classic dinner with its juicy, spicy Italian sausage, tender lasagna noodles, sharp parmesan, and creamy ricotta cheese and makes it a rich, sippable soup. Best of all, it’s easy to make and takes less than 40 minutes to whip up! One-Pot Lasagna Soup is perfect for getting rid of the Mondays!


• 1 pound ground spicy Italian sausage • 1/2 cup yellow onion, diced • 4 cups chicken broth • 2 (14.5 ounce) cans diced tomatoes, with Italian herbs, undrained • 1/4 teaspoon pepper • basil or cilantro, optional, to taste • 6 ounces lasagna noodles, broken into 1-2 inch pieces • 1/2 cup parmesan cheese, grated • 1 1/2 cups whole milk ricotta cheese


Step 1

In a 5 quart dutch oven, cook the Italian sausage and onion, stirring occasionally, until the onion is tender and the sausage is brown, about 8 to 10 minutes over medium heat.

Step 2

Drain the dutch oven.

Step 3

Stir in the chicken broth, pepper, diced tomatoes, desired herbs, and lasagna noodles.

Step 4

Heat the soup to a boil.

Step 5

Reduce the heat, cover, and let simmer for 10 minutes, stirring occasionally, until the pasta is tender.

Step 6

Top with parmesan, ricotta cheese, and your favorite spices and herbs.

Step 7

Serve warm!
