No-Bake Chex Cookies

No need to keep looking for a go-to cookie you can whip up in a snap! No-Bake Chex Cookies have all the ooey-gooey amazingness you’d want in a cookie, and you don’t even have to turn on the oven! Each bite of these yummy treats is packed with creamy peanut butter, sweet marshmallows, and crunchy Chex cereal. No-Bake Chex Cookies are so indulgent and tasty, you’ll want to treat yourself to them over and over again…and they’re so easy to make you’ll be tempted to do so!


• 1 cup granulated sugar • 1 cup corn syrup • 1 teaspoon vanilla • 1 1/2 cups creamy peanut butter • 5 cups Chex cereal • salt, to taste • 2 cups mini marshmallows


Step 1

Line two cookie sheets with parchment paper. Set aside.

Step 2

In a large saucepan, add the sugar, corn syrup, and vanilla.

Step 3

Bring the mixture to a low boil, stirring frequently.

Step 4

Carefully add the peanut butter and salt and stir until the peanut butter is fully incorporated. Turn the heat off once the peanut butter is fully incorporated.

Step 5

Add in the Chex cereal and stir well, making sure each piece is coated.

Step 6

Pour the marshmallows in and stir until evenly dispersed, but not for too long: the marshmallows should start to melt, but you do not want them to melt completely.

Step 7

Using a 2 tablespoon scoop, scoop out mounds of the chex mixture and place them onto the cookie sheet. They will not spread much, so you can place them close together.

Step 8

Let the cookies sit until firm, about 30 minutes.

Step 9

Store in layers in an airtight container.
