Ingredients• 1 cup butter, softened • 2 cups sugar • 2 large eggs, room temperature • 2 teaspoons lemon zest, grated • 2 teaspoons lemon extract • 4 cups all-purpose flour • 1 teaspoon baking soda • 1 teaspoon salt • 1 cup buttermilk
Beat together the butter and sugar until light and fluffy.
Add the eggs one at a time, beating well each time before adding the next one.
Beat in the lemon zest and extract.
Whisk together the flour, baking soda, and salt in a separate large bowl.
Add the butter mixture and the buttermilk into the bowl with the dry ingredients mixture, alternating between them and adding about 1/3 of each at a time.
Cover and refrigerate the bowl until the dough’s gluten relaxes and the butter solidifies, about 1 hour 45 minutes.
Preheat the oven to 375 degrees F.
Drop the cookie batter on an ungreased baking sheet by the tablespoonfuls, making sure the cookies will have enough room to spread out as they bake.
Bake until lightly browned, about 7-10 minutes.
