IngredientsFor the vanilla cupcakes: • 2 1/2 cups all purpose flour • 2 cups sugar • 3 teaspoons baking powder • 1 teaspoons salt • 1 cup milk • 1/2 cup vegetable oil • 1 tablespoon vanilla extract • 2 large eggs • 1 cup water For the vanilla frosting: • 1/2 cup salted butter, room temperature • 1/2 cup shortening • 4 cups powdered sugar, divided • 1 1/2 teaspoons vanilla extract • 2 tablespoons water or milk, plus more to taste
Preheat the oven to 350 degrees F.
Prepare a cupcake pan with liners.
Add the flour, sugar, baking powder, and salt to a large mixer bowl and combine. Set aside.
Add the milk, vegetable oil, vanilla extract, and eggs to a medium-sized bowl and combine.
Add the wet ingredient mixture to the dry ingredient mixture, beating until well combined.
Slowly add the water to the batter and mix on low speed until well combined. Scrape down the sides of the bowl as needed to make sure everything is well combined. The batter will be very thin.
Fill each of the cupcake liners about halfway with the batter.
Bake until a toothpick comes out with a few moist crumbs, about 15-17 minutes.
Remove the cupcakes from the oven and let them cool for 2 minutes.
Transfer the cupcakes to a cooling rack to finish cooling.
Combine the salted butter and shortening in a large mixer bowl, mixing until it is smooth.
Add 2 cups of the powdered sugar and mix until smooth.
Add the vanilla extract and 1 tablespoon of the water or milk and mix until smooth.
Add the remaining 2 cups of the powdered sugar and mix until smooth.
Add the remaining 1 tablespoon of the water or milk, plus more as needed, and mix until smooth.
Pipe the frosting onto the cupcakes.
