When the week starts truly getting hectic, you need a meal that you can make without breaking a sweat (or the bank). Life-Saving Fried Rice only asks that you pour the ingredients in a baking dish, stir, and bake. The result is a fluffy and hearty rice dish with crispy bacon and the savory, tangy, and sweet flavors of fried rice—without the frying pan. Mixed with tender vegetables, Life-Saving Fried Rice is a complete meal in one dish, so you can be a hero at dinnertime while staying on top of your schedule!
IngredientsFor the rice: • 1 1/2 cups long-grain white rice • 2 cups chicken stock • 1 1/2 tablespoons light soy sauce • 1 tablespoon Chinese cooking wine • 2 cloves garlic, minced • 2 cups frozen diced vegetables • 1/4 teaspoon white pepper • 1 1/4 cups bacon, chopped For the topping: • 1 tablespoon sesame oil • 1/2 cup green onion, finely sliced
Preheat the oven to 390 degrees F.
Place the white rice, chicken stock, soy sauce, Chinese cooking wine, garlic, frozen vegetables, and white pepper in a 9x13-inch baking dish and stir, spreading the rice evenly throughout the pan.
Scatter the bacon on top of the rice.
Cover the baking dish with foil and bake for 40 minutes.
Remove the foil and bake until the bacon has darkened in color, the liquid is absorbed, and the rice is cooked but still appears wet.
Transfer the baking dish from the oven and let it rest loosely covered with foil for 10 minutes.
Add the sliced green onion and sesame oil.
Fluff the rice and serve!
