Ingredients• 1 (15 ounce) can chickpeas • 2 tablespoons olive oil, separated • salt, to taste • pepper, to taste • 4 cups fresh kale, chopped, stems removed • 1 tablespoon lemon juice • 4 cups romaine lettuce, chopped • 1/4 cup parmesan cheese, grated • Caesar salad dressing, to taste
Drain and rinse the chickpeas.
Heat 1 tablespoon of the olive oil in a skillet on medium-high heat.
Add the chickpeas to the skillet and season with a bit of salt and pepper.
Roast the chickpeas until golden brown, stirring frequently to avoid burning.
Remove the chickpeas from the heat and set aside.
Place the kale, remaining 1 tablespoon of the olive oil, the lemon juice, and salt into a large mixing bowl.
Massage the kale with your hands to soften it.
In a large salad bowl, combine the kale, romaine lettuce, parmesan cheese, and Caesar dressing.
Top with the crispy chickpeas and serve.
