• 2 tablespoons butter • 1/4 cup onion, chopped • 1/3 cup celery, chopped • 1/4 cup green pepper, chopped • 1 (14.5 ounce) can diced tomatoes • 1 1/2 cups chicken broth • 2/3 cup long-grain white rice • 1 teaspoon dried basil • 1/4 teaspoon garlic powder • 1/4 teaspoon black pepper • 1/4 teaspoon hot sauce • 1 bay leaf • 2/3 cup chicken breast, diced and cooked • 2/3 cup Italian sausage, cooked and crumbled • 2/3 cup shrimp, peeled and cooked


Step 1

Melt the butter in a saucepan over medium heat on the stove-top.

Step 2

Stir in the onion, celery, and green pepper, and cook until the vegetables are softened, about 5 minutes.

Step 3

Pour in the diced tomatoes, chicken broth, and rice.

Step 4

Season the dish with the basil, garlic powder, pepper, hot sauce, and the bay leaf.

Bring the pan to a boil over medium-high heat.

Step 6

Turn the heat to medium-low and cover the dish.

Step 7

Simmer until the rice is cooked according to package directions.

When the rice has cooked, mix in the chicken, sausage, and shrimp.

Simmer until everything is heated through, about 2 minutes.

Take out the bay leaf before serving.
