Ingredients
• 1/2 cup dry white wine • 1/2 cup water • 3 sprigs of fresh dill or dried dill, to taste • 1 sprig of fresh parsley • 1 shallot, thinly sliced • 1 pound salmon filets, plus more to taste, pin bones removed • salt, to taste • freshly ground black pepper, to taste • 2 slices of fresh lemon, optional, for servingDirections
Step 1
Put the wine, water, dill, parsley, and shallots in a sauté pan.
Step 2
Bring the mixture to a simmer over medium heat.
Step 3
Sprinkle the salmon filets with salt.
Step 4
Place the salmon skin-side down in the pan.
Step 5
Cover and cook until the salmon reaches desired doneness and a minimum internal temperature of 145 degrees F, for about 5-10 minutes.
Step 6
Serve sprinkled with freshly ground black pepper and a slice or two of lemon on the side.
