Grilled Zucchini

• 2 (8 ounce) medium zucchini, sliced 1/4-inch thick • 1 tablespoon extra virgin olive oil, plus more for greasing the grill • 1 tablespoon red wine vinegar • 1 teaspoon dried parsley • 1 teaspoon dried basil • 1/2 teaspoon garlic powder • kosher salt, to taste • freshly ground black pepper, to taste


Step 1

Preheat the grill to medium-high.

Step 2

Toss the zucchini in a bowl with the olive oil, red wine vinegar, parsley, basil, and garlic powder.

Step 3

Lay the zucchini on a plate or cutting board, and season it with the salt and pepper.

Step 4

Once the grill is hot, carefully grease the grates with olive oil.

Step 5

Use tongs to place the zucchini on the grill. Cover and cook for 2-3 minutes. Flip and repeat with the other side.

Step 6

Once tender, remove the zucchini and add more salt and pepper to taste.

Step 7

Serve immediately!
