Easy Homemade Gravy

• 1/4 pound (1 stick) unsalted butter • 1 1/2 cups yellow onion, chopped • 1/4 cup flour • 1 teaspoon kosher salt • 1/2 teaspoon freshly ground black pepper • 2 cups turkey drippings plus chicken stock, defatted and heated • 1 tablespoon Cognac or brandy • 1 tablespoon white wine, optional • 1 tablespoon heavy cream, optional


Step 1

In a large saute pan, cook the butter and onions over medium-low heat until the onions are lightly browned, about 12-15 minutes. Make sure the onions are fully cooked before you move on.

Step 2

Sprinkle the flour into the pan and whisk it thoroughly until it becomes foamy, about 2 minutes.

Step 3

Add the salt and pepper and cook for 2-3 minutes.

Step 4

Add the hot chicken stock and turkey dripping mixture and the Cognac, and cook uncovered until thickened, about 4-5 minutes.

Step 5

Add the wine and cream, stirring to combine.

Step 6

Season to taste and serve.
