Easy Cheesy Zucchini Bake

Why have plain old roasted zucchini when you can have this Easy Cheesy Zucchini Bake? This side dish can be whipped up in an hour and makes plenty for everyone. It’s so yummy, you can pair it with any meat to make a complete, tasty meal. Easy Cheesy Zucchini Bake is delicious, cheesy, and seasoned to perfection with basil, green onion, thyme, and garlic powder!


Ingredients

• 2 medium zucchini, cut in slices or half-moon slices • 2 medium yellow squash, cut in slices or half-moon slices • 4 tablespoons fresh basil, finely chopped • 2 tablespoons green onion, thinly sliced • 1/2 teaspoon dried thyme • 3/4 teaspoon garlic powder • 1 cup mozzarella cheese, grated and divided • 1/2 cup parmesan, coarsely grated, plus a little more for the top • salt, to taste • fresh ground black pepper, to taste

Directions

Step 1

Preheat the oven to 350 degrees F.

Spray an 8x8-inch or 8x11-inch oven-safe glass dish with your oil or a non-stick spray.

Combine the zucchini, squash, basil, green onion, thyme, garlic powder,

Next, slice your green onions, and combine them with the sliced squash, the chopped basil, the sliced green onions, the dried thyme, the garlic powder, 1/2 of the grated mozzarella cheese, and the 1/2 cup coarsely grated parmesan cheese, stirring it all together until the zucchini is evenly coated with the mixture.

Step 5

Season the zucchini with salt and ground black pepper.

Place the zucchini mixture into the prepared baking dish.

Bake the dish for about 25-30 minutes. You can cook them for a little bit longer if you want the zucchini to be softer.

Step 8

When the dish is almost cooked through, take out the glass dish from the oven and top the dish with the remaining 1/2 cup of the grated mozzarella cheese and parmesan cheese.

Step 9

Place the glass dish back into the oven and bake until the cheese has melted to become bubbly golden brown, about 10-15 minutes.
