• 1 pound fingerling potatoes, cut in half lengthwise • 2 tablespoons olive oil • 2 cloves garlic, minced • 1 teaspoon salt • 1/2 teaspoon dried thyme leaves or 2 sprigs of fresh thyme • 1 teaspoon pepper • 1 tablespoon parmesan cheese, shredded


Step 1

To begin, preheat the oven to 400 degrees F.

Combine the oil, thyme, potatoes, garlic, salt, and pepper in a large bowl, mixing until evenly coated.
