Coconut Rice

Coconut Rice is a delicious way to mix up your rice routine. Infused with the rich and tropical flavors of coconut, it’s a perfect accompaniment to fish and Thai-inspired dishes with thick luscious sauces. • 1 (13.5 ounce) can coconut milk • 1 1/2 cups coconut water or water • salt, to taste • 2 cups jasmine rice


Step 1

In a medium non-stick saucepan over medium-high heat, bring the coconut milk and coconut water to a boil.

Step 2

Season the mixture with salt.

Step 3

Add the rice and lower the heat to bring the mixture to a simmer.

Step 4

Simmer the rice uncovered until the liquid has been absorbed, about 17-20 minutes.

Step 5

Remove from the heat and let the rice rest, covered, for about 15 minutes.

Step 6

Fluff with a fork and serve.
