• 1 pound elbows pasta • 2 pounds ground beef • 1 medium yellow onion, diced • 1 teaspoon garlic, minced • 1 (28 ounce) can petite diced tomatoes, drained • 2 (16 ounce) cans kidney chili beans in mild sauce • 2 packets chili seasoning • salt, optional, to taste • pepper, optional, to taste • 2 cups cheddar cheese, shredded and divided


Step 1

Preheat the oven to 400 degrees F.

Step 2

Cook the pasta according to package directions until al dente.

Step 3

Drain the pasta and set it aside.

Step 4

In a Dutch oven, brown the ground beef over medium-high heat until cooked, about 5 minutes. Break up any clumps while cooking.

Transfer the beef to a plate and drain the Dutch oven of fat.

In the same pot, saute the onions and garlic oil until fragrant, about 2 minutes.

Add in the cooked beef, tomatoes, chili beans, and chili seasoning.

Season with salt and pepper to taste.

Reduce the heat to medium and simmer the mixture for 5 minutes.

Add the cooked pasta and 1 cup of the cheddar cheese to the chili. Mix well.

Transfer the mixture to a 9x13-inch casserole dish.

Top with the remaining 1 cup of the cheese.

Bake until the cheese has melted, about 10 minutes.
