Ingredients• 1 cup sour cream • 1 cup half-and-half cream • 1 cup onion, chopped • 2 (4-ounce) cans of chopped green chiles • 1 teaspoon salt • 1/2 teaspoon pepper • 1 (2-pound) package of frozen, shredded hash brown potatoes • 2 1/2 cups chicken, cubed, cooked • 2 1/2 cups cheddar cheese, shredded, divided • fresh cilantro, optional, chopped
Preheat the oven to 350 degrees F.
Grease a 13x9-inch baking dish.
In a large bowl, combine the sour cream, half-and-half, onion, chiles, salt, and pepper.
Stir in the potatoes, chicken, and 2 cups of cheese.
Pour the mixture into the prepared baking dish.
Bake, uncovered, until golden brown, about 1 hour 15 minutes.
Sprinkle with the remaining cheese and cilantro.
