Ingredients• 1/2 pound penne pasta • 1 pound chicken breasts, boneless, skinless, and cut into small cubes • 6 ounces fresh baby spinach • 2 tablespoons unsalted butter • 2 cloves garlic, minced • 1 cup heavy cream • 1 1/2 cups parmesan cheese, freshly grated
Cook the pasta per packaging instructions until al dente.
Cook the chicken in a non-stick skillet over medium heat on the stove-top for about 3-5 minutes.
Add the spinach to the pan and cook for an additional 1-2 minutes.
In a large pot over medium heat, melt the butter and stir in the minced garlic. Cook until the garlic is soft and fragrant, about 1 minute.
Add the heavy cream to the garlic.
Whisk until it comes to a boil then reduce the heat.
Simmer until the mixture thickens.
Stir in the parmesan cheese, chicken and spinach, and drained pasta.
