Chicken Fried Brown Rice

That’s right, you can have the tangy, savory, salty favorite at its absolute freshest, steaming hot from your skillet. • 2 tablespoons vegetable oil, divided • 8 ounces chicken breasts, boneless, skinless, and sliced into strips • 1/2 cup large sweet red peppers, chopped • 1/2 cup green onions, chopped • 3 cups brown rice, cooked • 2 tablespoons light soy sauce • 1 tablespoon rice wine vinegar • 1 cup frozen peas, thawed


Step 1

Add 1 tablespoon of oil to a large skillet and warm over medium heat.

Step 2

Once the oil is hot, add the chicken, red pepper, and green onion to the skillet.

Step 3

Cook until the chicken is cooked through, about 5-7 minutes.

Step 4

Remove the chicken from the skillet and set aside.

Step 5

With the skillet still on medium heat, add the remaining oil.

Add the cooked rice and cook for 2-4 minutes, stirring often to prevent sticking and burning.

Step 7

Combine the soy sauce, vinegar, and peas into your skillet with the fried rice; cook for 1 minute.
