Ingredients• 2 tablespoons butter • 1/2 cup yellow onion, diced • 3 cloves garlic, minced • 1/2 teaspoon garlic powder • 1 teaspoon dried thyme • 1 tablespoon olive oil • 2 1/2 cups chicken broth • 1 1/4 cups white long-grain rice, uncooked and cleaned • 1 (10.75 ounce) can cream of chicken soup • 1/2 cup sour cream • 1 cup milk • 2 teaspoons Dijon mustard • 1 cup cheddar cheese, shredded • 1/3 cup parmesan cheese, grated • 1 cup chicken, cooked • 8 ounces ham steak or 1 cup diced ham • 9 slices Swiss cheese For the topping: • 1 tablespoon butter, melted • 1/3 cup seasoned bread crumbs
Preheat the oven to 375 degrees F.
Grease a 9x13-inch casserole dish.
Melt 2 tablespoons of butter in a pan. Add in the diced onions and cook them until softened, about 3-5 minutes.
Add the garlic, garlic powder, and thyme and cook until fragrant, about 1 minute.
Stir in the olive oil, chicken broth, and the rice.
Bring the mixture to a boil.
Reduce the heat to a simmer.
Cover and allow it to cook for 15 minutes, undisturbed.
Remove the pan from the heat and uncover.
Let the mixture sit for 10 minutes.
Stir in the cream of chicken soup, sour cream, milk, Dijon mustard, cheddar, cheese, parmesan cheese, chicken, and ham steak.
Transfer the mixture to the prepared casserole dish.
Layer the Swiss cheese on top of the mixture.
Bake until the cheese is bubbly and melted, about 15 minutes.
Mix together the melted butter and breadcrumbs.
Sprinkle the mixture on top of the casserole.
Bake for 10 minutes, uncovered.
Allow the casserole to cool before serving.
