Ingredients• 3 tablespoons butter, plus more for the pan • 1 small yellow onion, finely chopped • 3 tablespoons all-purpose flour • 1 teaspoon sweet paprika • 1 1/2 cups whole milk • 2 cups ham, diced and cooked • kosher salt, to taste • freshly ground black pepper, to taste • 2 1/2 pounds russet potatoes, peeled and sliced into 1/4-inch-thick rounds • 3 cups cheddar, shredded • chives, optional, freshly chopped, for serving
Preheat the oven to 375 degrees F.
In a medium saucepan, melt the butter.
Add the onions and cook until soft, stirring occasionally, about 4 minutes.
Add in the flour and paprika and saute until the raw flour smell dissipates, stirring constantly, about 1 minute.
While whisking, slowly pour in the milk.
Bring the mixture to a simmer and continue to whisk until thickened, about 3 minutes.
Stir in the ham.
Season with salt and pepper.
Layer half of the potatoes in the bottom of a 3-quart baking dish.
Season the potatoes with salt and pepper.
Spoon half the sauce over the potatoes.
Sprinkle the sauce with half of the cheddar.
Repeat the layers with the remaining potatoes, sauce, and cheese.
Cover the baking dish with foil and bake until potatoes are soft, about 40 minutes.
Remove the foil and continue to bake until the cheese is golden and bubbly, about 25 minutes more.
Sprinkle with chives before serving.
