Cheesy Ham & Potato Casserole

• 3 tablespoons butter, plus more for the pan • 1 small yellow onion, finely chopped • 3 tablespoons all-purpose flour • 1 teaspoon sweet paprika • 1 1/2 cups whole milk • 2 cups ham, diced and cooked • kosher salt, to taste • freshly ground black pepper, to taste • 2 1/2 pounds russet potatoes, peeled and sliced into 1/4-inch-thick rounds • 3 cups cheddar, shredded • chives, optional, freshly chopped, for serving


Step 1

Preheat the oven to 375 degrees F.

Step 2

In a medium saucepan, melt the butter.

Step 3

Add the onions and cook until soft, stirring occasionally, about 4 minutes.

Step 4

Add in the flour and paprika and saute until the raw flour smell dissipates, stirring constantly, about 1 minute.

Step 5

While whisking, slowly pour in the milk.

Step 6

Bring the mixture to a simmer and continue to whisk until thickened, about 3 minutes.

Step 7

Stir in the ham.

Step 8

Season with salt and pepper.

Step 9

Layer half of the potatoes in the bottom of a 3-quart baking dish.

Step 10

Season the potatoes with salt and pepper.

Step 11

Spoon half the sauce over the potatoes.

Step 12

Sprinkle the sauce with half of the cheddar.

Step 13

Repeat the layers with the remaining potatoes, sauce, and cheese.

Step 14

Cover the baking dish with foil and bake until potatoes are soft, about 40 minutes.

Step 15

Remove the foil and continue to bake until the cheese is golden and bubbly, about 25 minutes more.

Step 16

Sprinkle with chives before serving.
