Cheesy Chicken Garlic Bread

• 1/2 cup balsamic vinegar • 1 teaspoon sugar • 2 small chicken breasts, cubed • salt, to taste • pepper, to taste • 1 teaspoon Italian seasoning • 1 loaf of french bread • 1/2 cup butter, softened • 3 cloves garlic, minced • 2 cups mozzarella cheese, freshly grated • 1 cup grape tomatoes, sliced in half • 3 tablespoons basil, freshly chopped


Step 1

Preheat the oven to 400 degrees F.

Step 2

In a small saucepan over medium heat, combine the balsamic vinegar and sugar.

Step 3

Bring the vinegar mixture to a boil.

Step 4

Reduce the heat to low and let simmer until it reduces by half and has thickened, about 10 minutes.

Remove the saucepan from the heat and set it aside.

Step 6

In a large skillet over medium-high heat, cook the cubed chicken until thoroughly cooked through at 165 degrees F, about 6-8 minutes.

Season the chicken with salt, pepper, and Italian seasoning.

Cut the french bread in half lengthwise.

Place the loaf halves cut side up on a large baking sheet.

In a bowl, combine the softened butter and the garlic, stirring.

Spread the garlic butter over both of the french loaves' cut sides.

Top each half with the cooked chicken and the mozzarella cheese.

Place the sliced tomatoes on the loaf halves.

Place the loaf halves in the oven and bake until the cheese is melted and bubbly, for about 15-20 minutes.

Step 15

Remove the loaf halves from the oven and let each stand for about 5 minutes.

Step 16

Serve with chopped basil and the balsamic reduction.
