California Sheet Pan Nachos

California Sheet Pan Nachos are the easiest and quickest way to satisfy that nacho craving so universal to humanity. In 20 minutes, you can have a tray of crispy, crunchy nachos smothered in melty, stretchy cheese and juicy beef fresh out of the oven. Savory, hearty, and livened up with sweet onion and rich tomatoes, California Sheet Pan Nachos are a spicy snack that will be a bright spot in your day.


• 12 ounces salted tortilla chips, divided • 1 pound ground beef, cooked and divided • 1/2 cup pinto beans, cooked, drained, and divided • 1/4 cup red salsa, divided • 1/4 cup white onion, chopped and divided • 1/8 cup green onion, chopped, divided • 3 cups Oaxaca cheese, grated or shredded and divided • 1/3 cup sour cream • 1 Roma tomato, finely chopped • 3 tablespoons cilantro, roughly chopped • 1 avocado, cubed or sliced • jalapenos, optional, seeded and sliced


Step 1

Preheat the oven to 400 degrees F.

Step 2

Lightly grease a rimmed baking sheet.

Step 3

Layer the baking sheet with 3/4 of the tortilla chips and all of the ground beef, beans, salsa, white onion, and green onion.

Step 4

Top with 1 cup of the Oaxaca cheese.

Step 5

Then, add the remaining tortilla chips to the top, and sprinkle with the remaining 2 cups of cheese.

Step 6

Bake in the oven until the cheese has melted, about 8-10 minutes.

Step 7

Top with sour cream, tomatoes, cilantro, avocado, and jalapenos, and serve!
