For the vinaigrette: • 2 tablespoons olive oil • 2 tablespoons white balsamic vinegar • salt, to taste • fresh cracked pepper, to taste For the salad: • 1 cup avocado, diced • 1 cup mango, diced • 12 ounces chicken breast, grilled and sliced • 2 tablespoons red onion, diced • 6 cups baby red butter lettuce


Step 1

Whisk together the olive oil, white balsamic vinegar, salt, and pepper. Set the dressing aside.

Step 2

Toss the avocado, mango, chicken, and red onion together.

Step 3

Fill a large salad bowl or platter with the butter lettuce.
