• 8 ounces penne pasta • 2 chicken breasts, boneless and skinless • 4 teaspoons cajun seasoning • 4 tablespoons butter, divided • 3 cups half-and-half • 1/2 teaspoon lemon pepper seasoning • 1 teaspoon salt • 1 teaspoon pepper • 1/4 teaspoon garlic powder • 2 tomatoes, diced • 1/2 cup parmesan cheese, shreddedDirections
Cook the penne until al dente according to the package directions.
Drain the pasta.
Place the chicken breasts in a large resealable plastic bag.
Add in the cajun seasoning and shake thoroughly to evenly coat the chicken.
In a large skillet over medium heat, add 2 tablespoons of butter and allow to melt.
Add in the chicken and sauté until golden brown and cooked through at 165 degrees F, about 5 minutes per side.
In a separate skillet over medium heat, combine the half-and-half, the remaining butter, lemon pepper, salt, pepper, and garlic powder, stirring occasionally.
Remove the cream mixture from the heat when it starts to bubble.
Pour the cream sauce over the cooked penne.
Slice the chicken into strips.
Place the pasta on serving plates.
Top the pasta with the chicken, diced tomatoes, and parmesan.
