Ingredients• 2 pounds baby carrots • 1/2 cup unsalted butter • 1/4 cup honey • 1/4 cup brandy • 1/4 teaspoon salt or to taste • 1/4 teaspoon pepper or to taste • 1 tablespoon parsley fresh, optional, chopped, for garnish
Using a large skillet, bring about 1/2 inch of water to a boil on the stove-top.
Mix in the carrots, then cover and cook the carrots until they are crispy-tender, around 7-9 minutes.
Drain the carrots and set it aside.
Using the same skillet, cook the butter and honey over a medium heat until the butter is melted.
Mix in the brandy and bring the mixture to a boil.
Cook the glaze until it has reduced to about 1/2 cup.
Add the carrots back in and stir or toss to coat.
Season with salt and pepper to taste, garnish with parsley, and serve!
