Ingredients• 8 ounces elbow or rotini pasta • 1/2 cup bread crumbs • 1/3 cup parmesan cheese, grated • 1 1/2 tablespoons olive oil • 1 small onion, finely chopped • 1 clove garlic, minced • 1 1/2 pounds ground beef, lean • 1 (28 ounce) can stewed tomatoes • 1 1/2 teaspoons kosher salt • 1/2 teaspoon dried oregano • 1/2 teaspoon black pepper • 1 1/2 cups cheddar cheese, shredded
Using a large pot filled with boiling salted water, cook the pasta according to the package directions. Make sure to stir every once in a while.
Drain the pasta and set it aside.
In a mixing bowl, add together the bread crumbs and parmesan cheese. Set it aside.
In a 3 quart oven-safe pot, heat up the olive oil over medium heat on the stovetop.
Add in the onion and garlic, cooking for about 4 minutes and stirring constantly to prevent the garlic from burning.
Increase the heat to a medium-high.
Add in the ground beef and cook until you can see that the beef is well browned and juicy, about 7 minutes.
Scrape the beef into a colander to drain off the excess grease.
Wipe the pan and return the beef to the pan.
Reduce the heat to a medium.
Set the broiler.
Stir in the tomatoes, the salt, the oregano and the pepper into the already cooked beef, cooking for an additional 3 minutes. Add in the reserved pasta and mix it all together thoroughly.
Cook for another 2-3 minutes to heat up the pasta.
Remove the pan from the heat and stir in the cheddar cheese.
Sprinkle the reserved bread crumb mixture on top of the pasta.
Cook the casserole under the broiler until it is golden brown, about 2-3 minutes.
