Ingredients• 1 tablespoon olive oil, plus more for drizzling • 6 chicken breasts, halved lengthwise • salt, to taste • ground black pepper, to taste • 3/4 cup all-purpose flour • 1 tablespoon paprika • 2 eggs, beaten • 2 cups seasoned breadcrumbs • 1 large lemon, zested
Preheat the oven to 425 degrees F.
Line a large baking sheet with aluminum foil and drizzle 1 tablespoon of the olive oil over it.
Place the baking sheet in the preheated oven.
Flatten the chicken breasts so they are all about 1/4-inch thick.
Season the chicken with salt and pepper.
Mix the flour and paprika together on a large plate.
Beat the eggs with salt and pepper in a shallow bowl.
Mix the bread crumbs and lemon zest together on a separate large plate.
Dredge each chicken piece in the flour mixture, then the egg, then the breadcrumbs mixture, and set each aside in a single layer on a clean plate. Continue the process until all of the chicken breasts are coated.
Remove the baking sheet from the oven, and arrange the chicken in 1 layer on the sheet.
Drizzle the olive oil over each piece of the coated chicken.
Bake in the preheated oven for 5-6 minutes.
Flip the chicken and continue baking until it is no longer pink in the center and the breading is lightly browned, 5-6 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F.
