IngredientsFor the rice: • 2 cups white long-grain rice • 2 tablespoons reduced-sodium soy sauce • 1/2 teaspoon garlic powder • 3 tablespoons unsalted butter, softened. • 1 tablespoon canola oil, for frying • 1/4 cup carrots, finely chopped • 1/4 cup peas • 1/2 cup white onion, finely chopped • 1 egg, beaten
Cook the rice following the package directions.
Set the rice aside to cool.
Stir the soy sauce and garlic powder into the butter. Set the mixture aside.
Using a large skillet or a wok, heat the oil.
Add in the carrots, peas, and onion and cook until softened, about 2-3 minutes.
Add in the rice and the butter mixture, and cook, stirring, for 5 minutes.
Add the egg.
Cook for 2-3 minutes, stirring every once in a while.
Remove the skillet from the heat.
