Grilled Short Ribs

Make fall-off-the-bone short ribs every single time! Seasoned to perfection, grilled, and served with the BBQ sauce of your choice. Everyone will want you to host the cookouts from now on!


Ingredients

• 1 tablespoon packed brown sugar • 1 tablespoon paprika • 1 tablespoon chili powder • 1 teaspoon salt • 1 teaspoon garlic powder • 4 pounds beef short ribs (bone-in), trimmed of fat • Ice cubes • 1/2 cup barbecue sauce, plus additional for serving • Heavy duty aluminum foil

Directions

Step 1

In a medium mixing bowl, combine with sugar, paprika, chili powder, salt, and garlic powder. Place the meat on a prepared dish and rub all sides generously with the dry mixture. Cover and refrigerate for 30 minutes to 1 hour.

Step 2

Preheat the grill to medium indirect heat. Place a quarter of the ribs and two ice cubes in the center of an aluminum foil sheet. Double-fold the foil ends to seal the packet, leaving enough room for heat to curculate on the inside. Repeat the process until you have 4 total packets.

Step 3

Place the packets on the grill rack over medium infirect heat. Cover and grill for 1 1/2 hours to 2 hours until perfectly tender.

Step 4

Open packets carefully as there will be a lot of steam ready to escape. Make a slit across the top with a knife. Once the steam has escaped, open foil packets and remove the meat. Brush ribs with 1/2 cup of barbecue sauce and grill over direct medium heat for an additional 5 minutes, or until browned.
