Ingredients• 1 tablespoon packed brown sugar • 1 tablespoon paprika • 1 tablespoon chili powder • 1 teaspoon salt • 1 teaspoon garlic powder • 4 pounds beef short ribs (bone-in), trimmed of fat • Ice cubes • 1/2 cup barbecue sauce, plus additional for serving • Heavy duty aluminum foil
In a medium mixing bowl, combine with sugar, paprika, chili powder, salt, and garlic powder. Place the meat on a prepared dish and rub all sides generously with the dry mixture. Cover and refrigerate for 30 minutes to 1 hour.
Preheat the grill to medium indirect heat. Place a quarter of the ribs and two ice cubes in the center of an aluminum foil sheet. Double-fold the foil ends to seal the packet, leaving enough room for heat to curculate on the inside. Repeat the process until you have 4 total packets.
Place the packets on the grill rack over medium infirect heat. Cover and grill for 1 1/2 hours to 2 hours until perfectly tender.
Open packets carefully as there will be a lot of steam ready to escape. Make a slit across the top with a knife. Once the steam has escaped, open foil packets and remove the meat. Brush ribs with 1/2 cup of barbecue sauce and grill over direct medium heat for an additional 5 minutes, or until browned.
