Easy Roast Beef

The perfect Roast Beef doesn't have to be complicated. This recipe is delicious, flavorful, and stress-free. Pair with your favorite sides for the perfect meal!


• 1 (4 pound) round roast • 1/4 cup extra-virgin olive oil • 3 cloves garlic, minced • 1 tablespoon chopped fresh rosemary • 1 tablespoon chopped fresh thyme leaves • 2 teaspoons kosher salt • 1 teaspoon freshly ground black pepper


Step 1

Recommended: allow the roast to sit uncovered at room temperature for 1 to 2 hours.

Step 2

Preheat oven to 450 degrees F. In a small bowl, combine oil, garlic, rosemary, thyme, salt, and pepper. Rub the mixture all over the roast.

Step 3

Place the roast in a roasting pan fitted with a roasting rack. Roast for 15 minutes, then reduce heat to 325 degrees F and roast for an additional 1 hour and 45 minutes for medium, or 2 hours for medium-well.

Step 4

Remove from oven and allow the roast to rest 15 to 30 minutes before serving.
