Baked Fried Rice

Enjoy the delicious flavors of takeout fried rice without leaving your home! This Baked Fried Rice is easy, tasty, and serves 6—perfect for leftovers throughout the week.


Ingredients

• 2 cups long-grain white rice • 2 tablespoons canola oil • 1 tablespoon sesame oil, or to taste • 3 cloves garlic, crushed • 1/2 cup green onions, sliced • 1/2 cup red bell peppers, diced • 1/2 cup carrots, diced • 1/2 cup green peas • 1 cup diced ham • 1 pinch salt to taste • 3 cups chicken broth • 3 tablespoons soy sauce • 2 teaspoons chile paste, optional

Directions

Step 1

Begin by preheating the oven to 400 degrees F.

Step 2

In a large baking dish, place the rice and drizzle with the oils. Add in the garlic, green onions, peppers, carrots, peas, and ham. Stir until combined and season to taste.

Step 3

In a pot on the stove, combine the chicken broth, soy sauce, and chile paste (if using) and bring to a boil. Once combined and boiling, remove from the heat and pour over the rice, and stir.

Step 4

Cover the baking dish with foil and bake for 32 minutes.

Step 5

Remove from the oven and let sit for 10 minutes before uncovering and fluffing the rice with a fork.

Step 6

Increase the temperature of the oven to 475 degrees F and return the dish to the oven. Allow the rice to brown and crust for about 10 minutes.

Step 7

Remove from the oven, season to taste, and enjoy!
