Ingredients• 8 1/8 tablespoons butter, softened and divided into 1/2 cup (8 tablespoons) and 1/8 tablespoon • 1 cup sour cream • 1 egg • 1 (16-ounce) can whole-kernel corn, drained • 1 (16-ounce) can cream-style corn, undrained • 4 1/2 ounces corn muffin mix • 1 cup cheddar cheese, grated
Preheat the oven to 375 degrees F.
Using the 1/8 tablespoon of butter, grease a 2-quart casserole dish.
In a large bowl, mix the 1/2 cup butter, sour cream, and egg. Stir in the kernel corn, cream-style corn, and corn muffin mix.
Spoon the mixture into the greased casserole dish. Bake for about 45 minutes.
Remove the casserole from the oven and add the cheese, stirring well. Return the casserole to the oven.
Bake until the dish is slightly puffed, bubbly, and browned at the edges, about 15 minutes.
Remove from the oven and serve hot!
